How to make the Shrikhand

1. Take a muslin bag in a pan. Add 400 gm of yogurt and close the bag with yogurt inside. Squeeze out the extra water in the pan. Hang the bag for 3 hours

2. In a small bowl, add 4 tablespoons milk and 1 pinch of saffron. Rub the saffron strands with the fingers and refrigerate for 30 minutes.

3. In another bowl, add the hung curd and 3 tablespoons of sugar-free. Add 1/2 teaspoon of cardamom powder and chilled saffron milk. Mix all ingredients together.

4. Add 2-3 drops of saffron food color which are optional. Add 1 teaspoon of chopped pistachio and almonds. Mix well.

How to make the Puri

1. In a bowl, add 2 cups wheat flour, 1 tablespoon semolina, 1/2 teaspoon sugar-free and 1/4 teaspoon of salt.

2. Add 1 tablespoon oil and 1 cup milk. Start kneading the dough and add milk as needed. To make less oily puris, knead a hard dough. Cover the dough for 15 minutes.

3. Dust some flour on the board and make small dough balls.

4. Flatten the dough balls and roll the puri dough. To make round puris, apply the pressure to one handle and keep the other loose. Roll all puris in the same way.

5. Add 1-litre oil to the pot. Drop a small dough ball to check the temperature. Keep the flame on medium-high. Put some pressure on top of the puri to puff it up and fry the puris until golden brown.

6. Serve the Shrikand with Puri. Your delicious Shrikhand Puri is ready!

  • Strain the Yogurt well for Shrikhand:
    To achieve the rich, thick texture of Shrikhand, start with full-fat yogurt. Strain it in a muslin cloth or cheesecloth for 3-4 hours (or overnight) to remove excess whey. This will give your Shrikhand a creamy, smooth consistency.
  • Perfecting the Puri Dough:
    Knead the puri dough until smooth but firm – this helps puris puff up well. Avoid adding too much water, as a stiffer dough yields crispier puris.
  • Fry at the Right Temperature:
    For perfectly puffed and golden puris, heat oil over medium-high heat. If the oil is too hot, puris may burn or become too greasy; too cool, and they’ll absorb excess oil. Test with a small piece of dough to ensure it floats immediately and begins to bubble.
  • Leftovers:
    Store leftover Shrikhand in an airtight container in the fridge for up to 2 days. Puris are best enjoyed fresh but can be stored in a paper towel-lined container to maintain some crispness for a few hours.
