How to make the Khaman Dhokla

1. In a bowl, add 1 and 1/2 cups Gram flour, 1 and 1/2 tablespoons semolina and 2 tablespoons sugar-free.

2. Add 1 teaspoon ginger garlic paste, 1 tablespoon lemon juice and 1/2 teaspoon salt.

3. Add 3/4 cup water and mix well to make a smooth paste. Make sure to not leave any lumps in the mixture.

4. Add 1 teaspoon Eno Fruit Salt. Add some water drops on top of it to activate the fruit salt. Mix immediately to make a fluffy dhokla mixture.

5. Take a round pan and grease it with some oil. Add the mixture immediately to the pan and transfer to the steamer pot. Steam the dhokla for 10 minutes. After steaming, check if the dhokla is cooked with a toothpick. When inserted into the cooked dhokla, the toothpick should come out clean.

How to make the Tempering

1. Add 3 tablespoons oil, 1 teaspoon mustard seeds, 1 teaspoon sesame seeds and 1 pinch of asafoetida. Cover the pot in between to prevent the spices from splattering out.

2. Add 3 curry leaves and 3 chopped green chilies. Fry for a minute. Add 1/2 cup water to the tempering.

3. Add the tempering on the steamed dhokla. Garnish with some chopped curry leaves and coriander leaves. Let the water absorb for 5 minutes.

How to make Chutney

1. In a blender jar, add 2 chopped green chilies, 4 tablespoons coriander leaves, 3 tablespoons desiccated coconut and 1 teaspoons tamarind paste.

2. Add 1 teaspoon lemon juice, 1/4 teaspoon salt, 1 teaspoon sugar-free and 1/4 cup water. Grind the chutney in blender.
