1. Take 250 grams of tofu and put a chopping board on top of it. Put some heavy weight on the top and leave it like that for 30 minutes. This will remove the moisture from the tofu and will make it firm.

2. Chop the tofu into bite-size blocks. In a bowl, add 1 teaspoon salt, 1 teaspoon chili powder, 4 tablespoons rice flour, and 1 teaspoon peri peri powder. Add the tofu blocks and mix everything together.

3. In a pot, add 2 tablespoons of oil and the spiced tofu mixture. Stir fry it for 10 minutes until golden brown.

How to make Rice Noodles

1. In a pot, add 2 and a half glasses of water. Once the water is boiling, add 200 grams of rice noodles and boil exactly for 3 minutes. After 3 minutes, put the noodles in the cold water immediately.

2. In a pot, add 3 tablespoons of oil. Add chopped garlic and the white onion part of the spring onions. Fry them until golden brown. Add the green part of the spring onions and stir for only a minute.

3. Add 3 tablespoons of peanut powder, 2 tablespoons of Pad Thai sauce, 2 teaspoons of chili powder and 2 teaspoons of salt. Add chopped chilies, a pack of bean sprouts and the juice of half a lemon. Stir all ingredients together.
