Strawberry Coconut Bite : Sugar-free Dessert with Dates

When you buy strawberries in bulk, one can wonder what to do with all the strawberries. This very same question led me to this recipe. This is a unique perspective on strawberry dishes. It's made with dates and date sugar, which has a relatively lower glycemic index than sugar. This makes it perfect for people on calorie watch. The white bottom layer of coconut holds the juicy strawberry top very well. After removing it from the freezer, make sure to let it sit out for a while. It tastes best at room temperature.

Ingredients
  

How to make the Coconut base

  • 1 and 1/2 cups desiccated coconut
  • 1/2 cup cashew nuts
  • 1 cup deseeded dates

How to make the Strawberry Top layer

  • 1 cup cashew nuts
  • 4 tablespoons of date sugar
  • 1 cup strawberries
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

How to make the Coconut base

  • In a food processor jar, add 1 and 1/2 cups desiccated coconut.
  • Add 1/2 cup cashew nuts and 1 cup deseeded dates. Blend this mixture in a food processor.
  • Take a square tin to set the bites. Put butter paper in it. Cut corners of the paper to fit better.
  • Add the blended base mixture to the tin. Pat down with a spatula to set the base. Make sure to spread the mixture evenly. Put in the fridge until we prepare the strawberry top layer.

How to make the Strawberry Top layer

  • In a small bowl, add 1 cup cashew nuts. Add 1 cup warm water to it. Soak the cashews for 10 minutes.
  • After 10 minutes, drain the water from the cashews. In a food processor jar, add 4 tablespoons of date sugar.
  • Add 1 cup strawberries. Add 1 teaspoon vanilla extract and 1/8 teaspoon salt. Blend this mixture in a food processor.
  • Add the blended top mixture to the tin. Pat down with a spatula to set the base. Make sure to spread the mixture evenly. Put in the fridge overnight to set the dessert.
  • Next day, cut big squares of the dessert with the help of a knife. Remove the square bites carefully, as the strawberry top will start melting at room temperature.
  • Your sweet Strawberry Coconut Bites are ready!
